Once kava roots are harvested, drying is one of the most important steps in preparing them for use. In Fiji, this process has traditionally relied on the sun and open air, with roots laid out and turned by hand over several days to draw out moisture slowly and evenly.
Careful, gradual drying helps protect the root's natural qualities and is a big part of why properly prepared noble kava has the smooth character it's known for. It's a slower process than mechanical drying, but it reflects generations of accumulated knowledge about how to treat the plant with care.
